Our family's favorite part of the weekend has got to be Waffle Sunday. We make my yummy vegan waffles from scratch almost every week. Sometimes we add fruit or chocolate chips depending on the mood. Sometimes we top them with peanut butter. This week we went for a fall theme with whipped cream and sprinkles. Yummy!!!
Vegan Waffles Recipe
Makes approximately 4 large waffles or 8 small
Ingredients:
1 1/2 Cups Flour
2 Tbsp Baking Powder
2 Tbsp Ground Flaxseed (optional)
1/4 tsp Salt
1/2 tsp Cinnamon
1 Cup Alternative Milk
3/4 Cup Applesauce or Mashed Bananas
1-2 tsp Oil of choice (to oil waffle iron (I prefer coconut oil))
Directions:
In a large bowl combine all dry ingredients. Add Milk, then applesauce.
Stir to combine. Lightly oil waffle iron to prevent sticking. For small waffles use approximately 1/4 cup of mixture. For larger Belgian style waffles use 1/2 cup of mixture.
Top with your favorite waffle toppings and enjoy!!
